As we enter into the Autumn months it’s comforting to anticipate the cool, sweater weather and cozy nights spent at home. However, for most people this time of year can also mean returning to a full schedule of school, work, or both. For those nights when you crave a healthy, home cooked meal but want to avoid long prep times or an annoying clean up, consider these fantastic “one-pot” meal recipes!
Smoky Chicken Stew
Every Autumn lover will want to try this nutritious, rustic stew this season! It’s packed with antioxidants such as kale and butternut squash. Plus, it contains healthy protein and fibers. Once you’ve heated up the chicken sausage, simmer it with garlic, tomatoes, and onions. Next add your seasonings, including paprika, cumin, oregano, and a dash of cinnamon. Once sautéed, you’ll throw in the chicken thighs, butternut squash and kale. Simply cover and let cook for about 25 minutes.

Apple Chicken
It’s a great time of year to incorporate apples into your meals as they are in season! This recipe is healthy, quick, and includes all the flavors of Fall. Begin by cooking the chicken and bacon separately. When finished, set them aside and begin sautéing your vegetables. Include chopped onions, broccoli, sweet potatoes, and garlic. Once everything is tender you can add chicken broth, apples, dried herbs, and cinnamon. Bring it all to a boil, then add the chicken and bacon back in. Together prep and cook time is only 35 minutes!

Loaded Vegetarian Chili-Mac
This is the perfect meal for when you don’t feel like spending too much time in the kitchen and just want to get cozy with something comforting. Place a large pot with oil over medium heat and add in squash, zucchini, and peppers. Once everything is tender add in beans, corn, canned tomatoes and tomato paste. Stir it all up and begin seasoning! Once everything is combined add your noodles and broth. Bring it all to a boil and let simmer, once it’s done you can add any toppings you’d like. Doesn’t get much better than this!

Prosciutto Wrapped Chicken with Scalloped Potatoes
This is a great choice for a dinner get-together with friends. The recipe sounds fancy, but in reality it only includes a few ingredients and can all be made using the same one pan! First, mix together the ricotta ingredients. Next lay the prosciutto on a flat surface with the chicken lengthwise along the bottom of each strip. Dish out the ricotta filling evenly, then roll up the prosciutto, wrapping it around the chicken. (You can use toothpicks to seal the ends of each.) Now for the potatoes; slice them and place each around an ovenproof skillet, overlapping. Spread a mixture of olive oil and garlic over the potatoes, then sprinkle with seasonings. Place the chicken over the layer of potatoes and place in the oven for 40 minutes. The more you make this dish, the more you can experiment with the flavors.
